Cut the cheese into the desired shape, put an ice cream stick into the bottom and freeze for approx. 40 minutes. In the meantime season the minced beef with BBQ rub. Lay a thin layer with halve of the ME.AT (a bit bigger that the cheese) and put the cheese on top. Apply the rest of the minced beef and pinch the edges.
Let the ME.AT firm up in the fridge for one hour. Prepare your grill at 180°C / 356°F, and put the ME.AT on an indirect zone of the grill and let it cook for about 20 minutes. Then glaze the ME.AT with BBQ Sauce and cook for 5 minutes. Flip over, glaze the other side as well and let it cook for another 5 minutes.
Sprinkle the ME.AT Popsicle with roasted onions and enjoy.
