Put the cookies into a food processor and crush them for 5 seconds on medium speed. Put them into a bowl, add the melted butter and mix well. Put the mixture into a spring form, press it onto the bottom with a spoon and form a rim.
Preheat your grill / oven on 160°C / 320°F and blind bake the cookie-butter mixture for 10 min.
In the meantime, put the cream cheese into a bowl/food processor with a whisk attachment, add the sugar and the starch and stir for 2 min. on medium speed. Add all the remaining ingredients, the zest of 1 lime and approx. 2 tbsp. lemon juice and stir again for 2 minutes on medium speed.
Take the spring form out oft the grill/oven, pour in the filling and bake for approx. 50 min.
Allow the Cheesecake to cool down completely for several hours and enjoy.
