Cut the beef tenderloin into thin slices, stack 2-3 and cut into stripes. Then cut the stripes into cubes and afterwards chop them up finely. Put the meat into a bowl, finely dice the shallot and the capers and put them to the meat.
Add Dijon mustard, tomato ketchup, a dash of Worcester sauce and Tabasco and the egg yolk into the bow.
Season to taste with salt and pepper.
